Why do guys on dating apps often just first message "hey" or "hey how are you" instead of being more creative and unique? How do they think being a copycat will stand out?

Because it's a standard phrase to start communication.
If a hot girl pays attention to me it doesn't really matter what she says. Her attention is enough.
People choose a partner by sexual attractiveness in the first place.
If she is not creative in her messages, no guy would care either.
Of course, farther on when you start chatting moreover dating being smart and creative will really impress, but only as a SUPPLEMENT to attractive look.
It's one of the reason why pickup trainings suck.
Would you join a gym or workout at home and why?
That's not an interview for a stand-up artist.
BTW all the girls start their messages with a similar simple greeting.
